
Dancing
Shrimp or Goong Ten (กุ้งเต้น) is a crunchy mixed "salad"
literally crawling with small little transparent shrimp each of whom is
attempting to escape. It is live shrimp with very spicy sauce
containing lots of Garlic and Lime. It is very popular in North
Thailand.
Ingredients:
1 tablespoon coarsely ground dried red chili
1 tablespoon lemongrass sliced
1 tablespoon roasted sticky rice powder
1 tablespoon Kaffir lime leaves sliced
1 tablespoon shallot sliced
1 tablespoon spring onion chopped
2 tablespoons cilantro chopped
1 tablespoon mint leaves
3 tablespoons fish sauce
4 tablespoons fresh lime juice
1 cup very fresh live baby shrimp
Prepare baby shrimp by rinsing to clean in fresh water.
Place the fresh shrimp In a small bowl which has a cover.
Mixed together thinly sliced lemongrass, sliced kaffir lime leaves,
sliced shallot, ground dried red chili, roasted sticky rice powder,
fish sauce. Add to shrimp mixing quickly salt to taste.
Arrange Dancing Shrimp in serving bowl and sprinkle with chopped spring
onion, chopped cilantro and mint leaves and cover.
Serve immediately with sticky rice.
